Here are the key ingredients:

Some friends that you would like to eat with (make sure that they have money to pay their share of the meal!).
A bag or a box to store your food from day to day. The container should have the name of your lunch club on it, or else it might be thrown away.
Some food to put into that bag or box.
An algorithm for sharing the expenses between each other.
A way of communication, to coordinate when to eat. This could for instance be a mailing list, or an IRC channel.
